Sénia Territory: extra virgin olive oil (11/2012)
Extra Virgin Olive Oil is the best type of olive oil due to its quality, taste, aroma, and nutritional and health benefits. Its low acidity reveals a wide range of flavours, which are hidden in those of inferior quality and are inexistent in refined oils. Therefore, olive oils that are labelled "extra virgin" are the main guarantee that you are consuming quality oil, as opposed to other commercial names that can mislead consumers.
In Sénia Territory, the following olive varieties stand out: Farga, Morruda, Sevillenca and Empeltre, as well as Cuquelloand Marfil. The majority of oils are blends of these varieties, although the proportions of each are usually different depending on the area and time of harvest.
Recently, however, increasingly more monovarietal extra virgin olive oils have started to be produced and, in fact, the ten oil mills that participate in the project Aceite y Olivos Milenarios del Territorio Sénia (Millenary Olive Trees and Oil from Sénia Territory) make oils that differ from these varieties.
